In our wine cellar, the winemaking skills of the ancient Thracians are combined with the latest achievements in the field of winemaking. Our cellar has an annual processing capacity of 1200 tons of grapes. The bottle is the way for the wine elixir to reach the table of each of us. Before being bottled, the wine goes through a long journey that begins with the receiving ramp, where the grapes are received and sorted by species and quality. From there, the grapes fall into the wine press, where the bunches are separated from the grapes.
In the vat below, only the grains are ground to obtain a must of juice, skin, seeds and pulp. The red varieties are fermented together with the skin, and the white ones are separated from it. For white wines, only the wine juice is used. And with it, the violent alcoholic fermentation begins.

In this room, the secondary fermentation takes place, as well as the storage of the wines in the period before the wine continues its way to the bottling line or to the oak barrels for aging. The oak comes into contact with the wine and thus gives the drink the substances that form the desired qualities in it.
